DESCRIPTION & NUTRITIONAL VALUE

Red Acre Cabbage is an heirloom, open-pollinated variety that provides excellent storage capabilities. Plants produce beautiful, reddish-purple heads that are compact and require less space than traditional green cabbage varieties. This makes it a great variety for smaller gardens or intensive planting applications. Red Acre Cabbage heads are typically about 2-4 pounds and 6-7″ in diameter. Heads are also resistant to splitting and maintain their spherical shape throughout the growing cycle. This food is very low in Saturated Fat and Cholesterol. It is also a good source of Thiamin, Riboflavin, Folate, Calcium, Iron and Magnesium, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Potassium and Manganese.

HOW TO GROW AT HOME

*Start seed indoors or in greenhouse in early spring (5-7 weeks before planting outdoors)

Or plant directly outdoors in mid spring or early summer when last frost has passed.

*Sow 2-3 seeds together every 12-18 inches.

*Planting depth 1/8 inch.

*When seedlings are 1 inch tall thin to one plant every 12-18 inches.

*Plant cabbage in a sunny location where no cabbage was grown the year before.

*Keep weed free, moist and protect against pests.

HOW TO SERVE

Rainbow Red Cabbage Salad
2 cups shredded red cabbage discard the tough outer layer of leaves and stems,
4 cups romaine lettuce sliced
¼ cup carrot shredded
1 grapefruit peeled and membrane removed
1 tablespoon sliced almonds
1 avocado sliced
2 teaspoons roasted white sesame seeds
¼ cup ginger lime tahini dressing or other creamy dressing
*In a large salad mixing bowl, toss shredded red cabbage, romaine lettuce, carrot, grape fruit, and almonds together.
*Arrange sliced avocado on top and sprinkle roasted white sesame seeds on top to garnish. Serve with ginger lime tahini dressing.
