Not only do they add a nice twist to your salads, kale sprouts may also provide health benefits, including reducing your risk of some types of cancer and providing your body with tons of vitamin C. Kale is high in carotenoid phytonutrients and is among the highest sources of lutein, an important carotenoid for eye health, which has been found to reduce the risk for glaucoma.  When looking for black Tuscan kale, keep in mind that this nutrient-dense brassica vegetable has many names, including cavolo nero, lacinato kale, dinosaur kale, nero de toscana, Tuscan cabbage, palm tree kale, and black Tuscan palm.

How To Grow

Kale grows equally well in garden soil, raised garden beds, and containers. It also can grow indoors as long as you have adequate lighting. Soil that’s rich in organic matter and has sharp drainage is ideal. Space kale plants roughly 1 1/2 to 2 feet apart, and plant them at the same depth they were growing in their nursery container. Seeds should be planted around 1/2 inch deep. No support structure is necessary. Kale grows well in full sun to part shade. Water your kale plants regularly, so the soil stays evenly moist but not soggy.
