As its name implies, the "Early Wonder" Beet is a fast-growing beet that will produce a bountiful harvest.
The Early Wonder beet is a popular beet that is tasty, early maturing and produces abundant greens. Semi-globe shaped, skin is dark red with a deep red flesh that can be canned whole.
Early Wonder is harvested in bunches with large, vigorous tops attached to the young beets. Tall, bright, glossy green, red-veined tops and slightly flattened red roots.
They are low in calories, yet high in valuable vitamins and minerals. In fact, they contain a bit of almost all the vitamins and minerals that you need!

how to grow at home

*Break up the soil to a depth of 10 to 12 inches using a tiller. Spread 2 to 4 inches of compost over the ground with a rake. Mix the compost into the soil with the tiller. Spread a 10-10-10 nitrogen, phosphorous and potassium granular fertilizer over the planting site at a rate of 2 to 4 cups per 100 square feet. Incorporate the fertilizer into the soil using the tiller.

*Dig 1/2-to-1-inch-deep trenches with a trowel. Space each trench 12 to 18 inches apart. Sow beet seeds in the bottom of each trench, spacing individual seeds 2 inches apart. Backfill each trench with soil and very lightly press the soil down. Water the planted seeds thoroughly and deeply with a sprinkler.

*Water the beet seeds lightly every two to three days, keeping the soil evenly moist, but not soggy. Do not let the soil dry more than 1/2-inch deep. Watch for beet seedlings to emerge 7 to 14 days after planting.

*Water beet seedlings only in the morning hours of the day after they begin to form leaves so the foliage has time to dry before nightfall. Keep the soil evenly moist, watering only when the top inch of soil becomes dry. Avoid over-watering to the point of causing waterlogged and soggy soils as this will cause the beets to rot.

*Harvest beets when they reach a diameter of 1 to 2 inches.

HOW TO SERVE


*Combine the sugar and salt in 1 small container, the soy sauce, sherry and sesame oil in another, and place within arm’s reach of your wok. Have the other ingredients in separate containers within arm’s reach of your wok.

*Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan, then add the tofu and spread out in a single layer. Don’t stir for 1 minute, then stir-fry for 1 to 2 minutes, until it begins to color. Add the garlic and ginger and stir-fry for no more than 10 seconds. Add the beets and stir-fry for 1 minute.

*Add the leek and stir-fry for 30 seconds to a minute, until it softens, then add the beet greens and salt and sugar. Stir-fry for 1 to 2 minutes, until the greens have wilted. Add the sesame seeds, soy sauce, sherry and sesame oil, and cilantro and stir-fry for 1 minute. Stir in the dissolved cornstarch and stir-fry until the liquid in the wok glazes the vegetables and tofu, less than a minute. Remove from the heat and serve with rice, noodles or other grains.
