Description & Nutritional Value

Pea Microgreens are mini veggies filled with high nutrition. Having a sweet and tender taste, these mini leaves are excellent to eat both raw or cooked. They are very easy to grow and make a great garnish or addition to any salad.
Just like other microgreens, the pea shoots contain a higher density of nutritional benefits and come with several health benefits for your body. In fact, studies have proved that they contain over 40x more nutrients than fully matured peas. They not only ward off disease but also help prevent cancer.
One cupful of pea microgreens contains half of the recommended daily intake of Vitamin C for an adult. The vitamin can help improve your immune system that perhaps depleted due to smoking, stress, obesity, or too much drinking. Vitamin C also reduces the risk of infections and pneumonia associated with the common cold.

Jar Sprouting Green Peas

*Rinse ½-¾ cup green peas and pick out any stones, debris, or split beans. Place in a quart-size sprouting jar or other sprouting container.

*Add 2-3 cups water, filling the jar three-quarters full, cover with a sprouting screen or mesh sprouting lid. Soak green peas at least 8 hours or overnight.

*Drain and rinse green peas thoroughly. Invert the jar over a bowl at
an angle so that the beans will drain and still allow air to circulate.

*Repeat rinsing and draining 2-3 times per day until sprouts are the desired length, usually 3-4 days.

*Taste sprouts (not beans) daily; discontinue rinsing and draining when sprouts have reached desired length and flavor.

*Drain green peas for several hours before cooking or transferring to a covered container.

How To Serve

Pea shoots have a higher ratio of nutrients and enzymes when eaten raw in salad dishes, sushi rolls or as a side-green with meals. They are a frequently used vegetable in Asian stir-fry's, but we recommend adding them after the cooking time to slightly wilt the leaves, but preserve their green color, chlorophyll content and amino acid profile.

The shoots have a delicious, nutty and distinct sweet pea-like flavor with a more concentrated amount of nutrients and enzymes available compared to most store-bought produce. They can be a great sprout to add to your arsenal of microgreen seeds.

They are sweet, crisp and easy to use in all salads and green protein smoothies. You can also use pea sprouts for spreads or dips.
